Can you offer unlimited product variants in the "pro website" plan? I have to have product variants and otherwise I will be forced to use another website builder.

Hey Avery!

You can add unlimited product options and selections using Pro Website plan.

However, to add variants you will need to upgrade to Pro Shop plan.
